We’re a few days into 2011, and it’s back to the grindstone. After a season of ultra rich, fatty and sugary foods, and lots of festive cheer, most of us are ready to turn a perennial new leaf of increased activity and healthier foods. As a nod to these well-intentioned resolutions — and an inclination to bake some healthy, tasty, high fiber snacks for my family — I’ve whipped up a batch of these delicious, nut-free granola bars.

Okay, so I had to use up the last of a seemingly endless supply of pumpkin puree, created from one modest “pie” pumpkin, one soft pear, and half of very ripe banana. Yet another case of necessity giving rise to invention; and muffins seemed like just the ticket to fill the order: portable, moist, healthy and flavor-packed.

Talk about a mouthful. This is a suped up version of my traditional (and somewhat famous) oatmeal raisin cookie recipe. In addition to the loveliest plump organic Thompson raisins, I’ve added a handful of crushed cashews to boost the crunch factor, and malt-sweetened carob chips to amp up the melt-in-your-mouth quotient.

This time of year, zucchini are in full bounty – we’ve had nearly half a dozen in our weekly CSA food boxes over the past two weeks. And there’s only so much ratatouille one can eat. With the end of summer looming, I wanted to bake something that would make use of the copious amounts of zucchini we’ve got, and could also make a healthy snack to send in lunches.
